Ingredients
2 cup(s) precooked diced chicken
4 cup(s) diced potatoes
1 medium onion, diced
4 ounce celery, diced
1 can diced green chilies
4 ounce colby jack cheese, grated
1 ounce flour
1 ounce vegetable oil
8 cup(s) chicken broth
Directions
Add oil and flour to pot, stir over medium heat until flour begins to turn a light brown and has absorbed all of oil. Add onion and celery and stir until vegetables wilt.Add chicken, potatoes,green chilies and broth.stir until well blended. Simmer till potatoes are done.Add 1 tbsp. of flour to the grated cheese and add to pot, stir until melted. Soup should be creamy and a little thick at this point. Serve immediately.
