Ingredients
  • 2 medium limes
  • 3 pound apples (peeled, cored and diced)
  • 2 large navel oranges (peeled and chopped)
  • 1 piece jalapeno chile pepper (seeded and minced)
  • 1/2 medium red onion (finely chopped)
  • 1/4 cup(s) cranberries (dried)
  • 1/4 cup(s) seedless raisins
  • 1/2 cup(s) brown sugar (packed)
  • 1/4 cup(s) apple cider vinegar
  • 1 tablespoon crystallized ginger
  • 2 tablespoon fresh ginger root (peeled and minced)
  • 1/2 teaspoons sea salt
Directions

Prepare limes: grate 1 teaspoon peel and squeeze 2 tablespoons juice.
In a large heavy saucepan, heat lime peel, lime juice, and remaining ingredients to boiling over medium-high heat, stirring occasionally. Cook, uncovered, about 20 minutes or until thickened, stirring occasionally. Cover and refrigerate chutney until well-chilled, about 6 hours or up to 5 days.
