Mango Bean Salad with Southwestern Style Veggie Cakes

Ingredients
- 1/4 cup(s) chopped, seeded tomato
- 1/4 cup(s) chopped fresh cilantro
- 2 tablespoon olive oil
- 2 tablespoon lime juice
- 1/2 teaspoons ancho chili powder or chili powder
- 1 piece clove garlic, minced
- 1/8 teaspoons salt
- 4 piece morningstar farmsĀ® southwestern style veggie cakes
- 6 cup(s) torn romaine lettuce
- 2 medium mangoes, peeled, seeded and chopped (about 2 cups)
- 1 can (15 oz.) black beans, rinsed and drained
- 1 cup(s) grape tomatoes, halved
- 1/2 cup(s) chopped red onion
Directions
1. In food processor combine 1/4 cup tomato, cilantro, oil, lime juice, chili powder, garlic and salt. Cover and process until smooth. Set aside.
2. Cook Morningstar FarmsĀ® Southwestern Style Veggie Cakes according to package directions.
3. Meanwhile, in large bowl combine lettuce, mangoes, beans, 1 cup tomatoes and red onion. Drizzle with lime juice mixture. Toss until coated. Arrange on four serving plates. Top each salad with one veggie cake.
